We are having the weirdest weather. One day this week I was in the back yard sitting on a blanket in the sunshine with the dogs and two days later we had snow! Weird, weird weather.

Of course, since all food cravings are influenced by the weather, we just haven’t known what to eat! Our menu has run the gamut from Honey Chipotle Chicken to Chicken Enchilada Soup, so a little Spring and a little Winter has been in the mix. We just can’t decide!

But there is one thing I always crave no matter what the weather, and that’s comfort food! These easy Banana Overnight Oats are packed with two comfort foods in one. The satisfying oats mixed with the texture of a ripe banana come together so well.

Sweet bananas, cinnamon, vanilla and maple syrup lend all the flavors of traditional banana bread. The gluten free oats add a hearty touch and a secret ingredient makes these a protein packed grab and go breakfast! I also add a scoop of protein powder to help keep me full throughout the morning.

Now, I had to experiment with this a few times before I got the flavors just right, but my favorite flavors were achieved by blending the milk, cinnamon, vanilla, maple syrup and an entire banana together just like you would for a smoothie. This allowed the banana to be a natural sweetener and packed a ton of flavor without worrying about any chunks of fruit.

  • Milk- I used 2%, but use whatever kind you prefer
  • Medium banana- I prefer a more ripe banana for a stronger flavor
  • Maple syrup- this adds great sweetness, but if don’t have any, honey will work
  • Cinnamon
  • Vanilla extract
  • Protein powder- This is optional! We use Mountain Ops or MyoFusion in our house
  • Old-fashioned oats- I used gluten free, but as long as you don’t use instant oats, any kind will work
  • Chopped pecans

If you can resist these delicious oats for longer than one night, my hat is off to you! But one of the best things about Banana Overnight Oats in they will stay good in the fridge for up to five days, as long as they are covered securely.

How do you make gluten free Overnight Oats?

These delicious oats come together in a breeze! First, blend together the milk, banana, maple syrup, cinnamon, vanilla and protein powder. Mix until very smooth.

Next, pour the blended ingredients into any container (glass jar, a bowl, etc.) and mix in the oats until they are fully incorporated. Finally, cover your container tightly and place in the fridge overnight. I personally used a small glass jar for my oats.

How easy is that? In the morning, top your oats with the chopped pecans and any other toppings you want! Fruits, nuts, cinnamon or maple syrup are all great options. This recipe is so easy to customize according to your personal preferences!

Ingredients
 

  • 1 cup milk, I used 2%
  • 1 medium banana, (preferably ripe so it has a more intense flavor)
  • 1 teaspoon maple syrup
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 cup protein powder, completely optional, I use the gluten free MyoFusion
  • 1 cup gluten free old fashioned oats
  • 2 tablespoons chopped pecans, for topping

Instructions
 

  • Place the milk, banana, maple syrup, cinnamon, vanilla and protein powder in the blender and blend until very smooth.
  • Pour liquid into a glass jar or bowl and stir in the oats until they are saturated.
  • Cover tightly and place in a fridge overnight.
  • When ready to eat stir well and top with pecans.
  • Garnish with additional fruit, nuts, cinnamon or maple syrup!
