Let’s be honest. Green smoothies?
They might taste delicious. They might be packed with nutrients, they may even be a great way to give you fuel to get the day going! But they sure don’t look very good!
I drink a green smoothie at least a couple mornings a week. My favorite is this Mango Peach Green Smoothie. I totally love the fruity flavors and can’t tell at all that it is packed with spinach. But, I never drink it in a clear glass because bright green thick liquid? Yeah, not super appetizing!
But! I have a solutions! A smoothie that is still packed with veggies that is beautiful!
This Carrot Cake Smoothie is ridiculously simple and loaded with shredded carrots, pineapple and coconut milk. It has all of the flavors of a carrot cake, but in an easy, healthy, sippable form!
This has become one of my new favorites. I love the hint of tropical flavors from the pineapple and the coconut milk, and the big nutritional punch the carrot adds. It is just the healthy snack I need to get me through the day!
Ingredients
- 1 cup frozen pineapple
- 1/2 cup shredded carrot
- 1/2 cup light coconut milk*
- 1 tablespoon honey
- 2 teaspoons vanilla extract (optional)
Instructions
- Place all ingredients in a blender and blend until smooth.
- *I have also used regular milk with the addition of 1/2 teaspoon coconut extract and it was great!
