I wanted to try something easy to get our group together this time- this week has been nuts and honestly, I didn’t have the brain power to come up with something complicated! So I racked my brain and voila, I happen to have the perfect meal!

This easy Pork Tenderloin with Grits is packed with flavor and feeds a crowd! This meal comes together in just 30 minutes. The secret is using an already marinated pork tenderloin.

These cuts of meat have become an essential part of our meals because most flavors are gluten free and they make dinner time so much easier because they have already made sure the Tenderloin has the perfect amount of flavor! For this recipe I picked up a one pound Smithfield Roasted Garlic & Cracked Black Pepper Tenderloin

Ingredients for Pork Tenderloin with Grits

  • Smithfield Roasted Garlic & Cracked Black Pepper Tenderloin- We love this flavor, but there many choices!
  • Gluten free chicken stock- If you aren’t gluten free, regular stock or broth work fine.
  • Yellow corn grits (not instant grits)- Instant grits just aren’t the same, are they?
  • Cream cheese- Low fat or full fat both work fine here.
  • Sharp cheddar cheese- I recommend using a shredded sharp cheddar here. It melts well and has a great bite.
  • Green chilies- These chilies add just the right amount of kick to the grits!

How do you make pork tenderloin?

This recipe comes together in 30 minutes and is a breeze to prepare! Here is how we make it:

First, preheat your oven to 425. Place your Smithfield Roasted Garlic and Cracked Black Pepper Tenderloin on a baking sheet and bake for 30 minutes. While your tenderloin is baking, bring the chicken stock to a low boil over medium-high heat in a large sauce pan. 

When the stock begins to boil, reduce the heat to low. Add in your grits and cover. Cook for five minutes. Next, stir in the cream cheese, cheddar cheese and green chilies. Remove from the heat once all of the liquid has been absorbed.

Following this, remove the Smithfield Roasted Garlic and Cracked Black Pepper Tenderloin from the oven and allow to rest for at least five minutes. After resting, cut into slices. To assemble, place grits in a bowl and top with sliced Tenderloin. Garnish with additional green chilies or cheddar if desired.

Storage and Reheating of Pork and Grits

This Pork Tenderloin will stay fresh in the fridge in 2-4 days, as long as you store it in a glass or plastic container with an airtight lid. Cooked grits will stay good in the fridge for up to seven days, but they will need to be stored in the same way as the Pork Tenderloin.

To reheat, put your Pork Tenderloin on a microwave safe plate and heat for 20 second increments until your desired temperature is met. Place your grits in a microwave safe bowl and warm in the same way.

Ingredients
 

  • 1 pound Smithfield Roasted Garlic & Cracked Black Pepper Tenderloin
  • 2 cups gluten free chicken stock
  • 1/2 cup yellow corn grits, not instant grits
  • 1 ounce cream cheese
  • 1/2 cup sharp cheddar cheese, shredded
  • 1 4 ounce can green chilies

Instructions
 

  • Preheat oven to 425.
  • Unwrap the Smithfield Roasted Garlic & Cracked Black Pepper Tenderloin and place on a baking sheet or roasting pan.
  • Bake 30 minutes.
  • While tenderloin is cooking, bring the chicken stock to a low boil over medium high heat in a sauce pan.
  • When stock is boiling, reduce heat to low and stir in the grits. Cover and allow to cook 5 minutes.
  • Stir in the cream cheese, cheddar cheese and green chilies and remove from heat when all the liquid has absorbed.
  • Remove the Smithfield Roasted Garlic & Cracked Black Pepper Tenderloin from the oven and allow it to rest at least five minutes.
  • To assemble, place the grits in the bowl and top with sliced Tenderloin and garnish with additional green chilies and cheddar if desired.
