I love strawberry season. When you walk through the produce section at the grocery and the sweet smell of strawberries envelopes you, means winter is really over.

These strawberry pancakes have been our weekend go-to for the last month. These easy keto pancakes have an almond flour, cream cheese, and egg base. They are light and soft and have a hint of strawberry and vanilla flavor. I serve them with additional strawberries on top and a delicious vanilla cream cheese spread!

Bonus: these reheat very well. They are perfect for keto meal prep or they make a great sweet treat!

Ingredients in Strawberry Pancakes 

These strawberry pancakes are not-so-secretly keto pancakes with cream cheese and almond flour in them. I promise these don’t taste healthy at all! Here’s what goes into the pancakes:  

  • Almond flour
  • Cream cheese
  • Eggs
  • Vanilla extract
  • Keto-friendly sweetener (Swerve or Monkfruit)
  • Strawberries
  • Baking Powder
  • Salt

If you would like to make the vanilla cream cheese spread, which I whole heartedly recommend, you will also need heavy cream in addition to the ingredients above.

How to Make Strawberry Pancakes 

These keto strawberry cheesecake pancakes are so simple to make and take very little time to prep. Here’s how to make keto almond flour pancakes with cream cheese glaze:  

  1. In a blender or food processor, combine the almond flour, cream cheese, eggs, sweetener, vanilla, strawberries, baking powder and salt. Blend until smooth.
  2. Heat a greased skillet or griddle to medium heat.
  3. When the skillet is hot and the butter is completely melted, add the batter to the skillet, about 1/4 cup at a time.
  4. Do not flip until little bubbles form in the center of the pancakes indicating they are ready to be flipped.
  5. Repeat until all of the batter has been used, adding butter to the skillet as needed.
  6. Serve warm with vanilla cream cheese spread and sliced strawberries.

How Many Carbs Are in the Keto Pancakes? 

I have included two different sets of nutritional information below. One is for both the pancakes and the glaze, which comes to 2.3 net carbs each. The second is for the pancakes only without any cream cheese spread. The net carb per pancake is 1.3 net carbs each.

Tips for Making Low Carb Pancakes

  • I’ve only made this strawberry cheesecake pancakes recipe with almond flour. I can’t speak to how using coconut flour or another grain-free flour alternative would affect the texture. 
  • Use brick-style cream cheese for best results, not the whipped kind that comes in a tub. 
  • I used fresh strawberries in this recipe, but I imagine frozen would work too. Just let them thaw and drain them before chopping and adding to the batter.

Ingredients
 

Strawberry Pancakes

  • 3/4 cup almond flour
  • 4 ounces cream cheese
  • 3 large eggs
  • 1 tablespoon keto friendly sweetener, Swerve or Monkfruit
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped strawberries
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Cream Cheese Glaze

  • 2 ounces cream cheese
  • 1/2 cup confectioners keto sweetener, Swerve or Monkfruit
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons heavy cream

Instructions
 

Pancakes:

  • In a blender or food processor combine the almond flour, cream cheese, eggs, sweetener, vanilla, strawberries, baking powder and salt.
  • Blend until smooth.
  • Heat a greased skillet or griddle to medium heat, when the skillet is hot and the butter is completely melted add the batter to the skillet, about 1/4 cup at a time.
  • Do not flip until little bubbles form in the center of the pancakes indicating they are ready to be flipped.
  • Repeat until all of the batter has been used, adding butter to the skillet as needed
  • Serve warm with vanilla cream cheese spread and sliced strawberries

Cream Cheese Glaze:

  • Combine all of the cream cheese glaze ingredients in a blender or food processor, blend until smooth. Add more heavy cream if you want to thin the mixture.
