I was talking to a friend that is a teacher last week and she mentioned she has two weeks left of Summer vacation. What?! Two weeks?
Schools here let out in late May and start back in early August so Summer break for students and teachers is very short. It got me thinking about all the Summery things I haven’t done yet!
One of those is definitely nice big summer salads. I have made this Sweet Corn Salad several times and I make this Asparagus Salad a few times a month, but those aren’t the kinds I am taking about. I mean the kind of salads where you just throw everything you have together, top it with some sort of grilled meat and just go for it! It was definitely time to change that!
I decided to make a simple, yet super delicious Honey Chipotle marinade for the chicken. The marinade only has five ingredients and would be great on any kind of meat. I especially love this on shrimp and salmon, but I used chicken for this recipe. Simply combine your marinade ingredients and meat in a large plastic bag and let marinate for at least 4 hours. Then grill your meat for about 3 minutes on each side until cooked through and lightly charred.
Since the chicken has that great smokey-sweet-kind-of-spicy flavor going on I paired it with a bed of fresh spinach, cucumber, tomatoes, avocado and ranch dressing. These lighter ingredients helped to mellow out the smokiness from the chicken to make for one totally irresistable salad!
I also paired this with my favorite Avocado Bacon Dip and a big basket of tortilla chips. Talk about a fiesta!
Ingredients
- 1 pound chicken breast, trimmed and sliced
- 3 tablespoons honey
- 2 tablespoons adobo sauce
- 1 tablespoon lime juice
- 1/4 teaspoon garlic powder
- 1/4 teaspoon garlic salt
Instructions
- Combine the honey, adobo sauce, lime juice, garlic powder and garlic salt.
- Microwave for 20 seconds or until smooth.
- Place chicken in a plastic bag and pour marinade over chicken, refrigerate for at least 4 hours.
- Grill for 3 minutes on each side.
