Combine apple cider, white wine, apple brandy, honey simple syrup, sliced apples, and pomegranate seeds in a large pitcher and stir.
Refrigerate until ready to serve, at least 1-2 hours.
When ready to serve, top with ginger beer, pour into glasses, and garnish with star anise.

Simple Syrup: Simple syrup is used as a liquid sweetener for many drinks. You can make it with just sugar and water (you can even make it keto) or purchase store bought. For this recipe I love to use this Honey Simple Syrup for a richer, deeper flavor. However, you can use whatever variety you prefer.
