Ingredients
 

  • 1 1/2 cup chopped, cooked chicken
  • 3 ounces cream cheese, softened
  • 1 1/2 cup shredded cheddar
  • 3 eggs, beaten
  • 2 tablespoons chopped green onions
  • 1-2 tablespoons buffalo sauce, depending on how spicy you like things
  • 3/4 cup almond flour
  • 1/2 teaspoon baking powder

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Combine the cooked chicken and cream cheese until completely combined.
  • Stir in the shredded cheese, eggs, green onions, buffalo sauce, almond flour and baking powder until a thick dough forms.
  • Chill the dough 15 minutes. 
  • Using a small cookie scoop to portion the bites out.
  • Drop onto a silicone lined baking sheet and bake 15-18 min until golden brown and cooked through. 
  • Serve with additional buffalo sauce and low carb ranch dressing for dipping.

Notes

  • You can use any variety of cooked chicken for this recipe. This is a great way to use up leftover shredded, grilled or rotisserie chicken.
