Super simple Strawberry Lemon Bread that tastes just like spring! Bursting with fresh berries and lemon juice!

Ingredients
 

For the Strawberry Bread:

  • 2 cups Gluten Free Bisquick
  • 1/2 cup brown sugar
  • 1 5 ounce package instant vanilla pudding mix
  • 2/3 cup milk
  • 1 tablespoon baking powder
  • 1/3 cup canola oil
  • 1 teaspoon salt
  • 1/3 cup sour cream
  • 1 egg, beaten
  • 1 cup mashed strawberries

For the Strawberry Lemon Glaze:

  • 1 cup powdered sugar
  • Zest of one lemon
  • 1 large strawberry, mashed
  • 2 teaspoons lemon juice
  • 1 tablespoon milk

Instructions
 

For the Strawberry Bread:

  • Preheat oven to 350
  • Combine the flour, sugar, pudding mix, baking powder and salt.
  • Add the milk, oil,egg, mashed strawberries and sour cream until well combined.
  • Grease a mini loaf pan and fill 3/4 full with batter.
  • Bake 20-25 minutes until a toothpick comes out clean.

For the Strawberry Lemon Glaze:

  • Combine all ingredients and stir well.
  • Let bread cool completely, dip into glaze.
