Ingredients
 

  • 1 tablespoon extra virgin olive oil
  • 3 tablespoons butter, not all used at once
  • 2 tablespoons minced garlic
  • 1 pound thawed shrimp, shells removed
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/4 cup white wine, chicken or vegetable broth will also work
  • 2 tablespoons lemon juice
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons heavy cream*, optional

Instructions
 

  • Heat a large skillet over medium heat and add the olive oil and 1 tablespoon of the butter. When the butter has melted completely add the garlic and saute about 30 seconds.
  • Add the thawed shrimp in a single layer (it will shrink a lot) and sprinkle with salt, pepper and Italian seasoning. Cook the shrimp 1-2 minutes, then turn. Add the wine and allow the liquid to reduce over the next 2-3 minutes.
  • Add the remaining 2 tablespoons butter, lemon juice, red pepper flakes and heavy cream if using. Cook an additional minute or so until the liquid thickens and the shrimp has cooked through.

Notes

Heavy cream is not a traditional shrimp scampi ingredient. However, if you prefer a creamier sauce this is the perfect addition.
To serve with roasted broccoli as pictured roast 12 ounces of broccoli at 400 degrees for 15-20 minutes until it reaches your desired tenderness. When the shrimp is cooked through add the broccoli to the pan and toss in the scampi sauce. Serve with lemon wedges.
