Ingredients
 

  • 1/2 cup butter, softened
  • 1/2 cup low carb peanut butter, or almond butter
  • 3/4 cup Golden Monkfruit or Brown Sugar Swerve
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened almond milk
  • 1/3 cup cocoa powder
  • 1 1/2 cups almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup Lilly's sugar-free dark chocolate chips

Instructions
 

  • Preheat oven to 350 degrees F.
  • Using an eletric mixer add butter, peanut butter and sugar.
  • Cream together on medium speed until completely combined and the texture is smooth.
  • Add eggs, almondmilk and vanilla, mix together on low speed until well combined.
  • Add cocoa, almond flour, baking powder and salt.
  • Mix together on low speed until just combined, be careful not to overmix you want the mixture to be light and airy.
  • Stir in chocolate chips.
  • Scoop into greased or lined muffin tins until 3/4 full.
  • Bake for 20-25 minutes, until toothpick inserted comes out clean.

Notes

This makes 18 muffins for me. The batter increases in volume because the butter, sugar and peanut butter are whipped. If you skip this step, your batter will be dense and will not yeild as many muffins.
