Ingredients
 

Small Batch:

  • yields approximately 1 cup cooked cranberry sauce
  • 2 cups fresh cranberries, about 6 ounces
  • 1/2 cup confectioner erythritol or monkfruit, I use Swerve, linked below
  • 1/2 cup water

Large Batch:

  • yields approximately 2 cups cooked cranberry sauce
  • 4 cups fresh cranberries, 12 ounces
  • 1 cup water
  • 1 cup confectioner erythritol, I use Swerve, linked below

Instructions
 

  • Combine the cranberries, water and confectioner sweetener in a sauce pan and bring to a boil.
  • Reduce to a simmer, stir occasionally for 10 minutes.
  • Remove from heat and cool.

Notes

Flavor variations:

Original Low Carb Cranberry Sauce: Cranberries, water, sweetener as listed above.
Low Carb Cranberry Orange Sauce:
  • Small Batch: Stir in 1/2 teaspoon orange zest
  • Large Batch: Stir in 1 teaspoon orange zest
Low Carb Vanilla Cranberry Sauce:
  • Small Batch: Stir in 1 teaspoon pure vanilla extract
  • Large Batch: Stir in 2 teaspoons pure vanilla extract
