Ingredients
 

Mango Sorbet

  • 2 heaping cups of frozen mango
  • 1/3 cup VA de VI Sparkling Wine, or sparkling grape juice

Strawberry Sorbet

  • 2 heaping cups frozen strawberries
  • 1/2 cup Blanc de Noirs Sparkling Wine, or sparkling grape juice

Instructions
 

  • For the Mango Sorbet: Place the mango and wine in the blender and blend until smooth. Place mixture in the freezer for at least 6 hours.
  • For the Strawberry Sorbet: Place the strawberry and wine in the blender and blend until smooth. Place mixture in the freezer for at least 6 hours.
  • To assemble: Place two scoops of sorbet in a cup and pour chilled wine over the sorbet.

Notes

  • The amount of wine needed depends on the consistency of your fruit. You want to add enough liquid so that it blends smoothly but not so much that it's runny.
  • If you are using a dry sparkling wine, you may find that it's not very sweet. If you'd like to sweeten your sorbet, try blending in a little simple syrup or honey to taste.
