Preheat oven to 350 degrees F and lightly spray or grease a deep pie dish or a cast iron skillet.
Carefully press the crust into the pan and up along the edges, then prebake for 10-12 minutes.
While the crust is baking, beat the eggs and ricotta together and set aside.
When the crust is finished, pull it out of the oven and increase the heat to 375 degrees F.
Sprinkle the bacon, spinach leaves, jalapeños, and gouda over the pie crust, then add salt and pepper to taste.
Pour the egg and ricotta mixture over the toppings.
Bake for 20-25 minutes until set in the center.
