Ingredients
 

  • 1 pound cooked cocktail shrimp
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • 1 tablespoon chopped fresh herbs, basil, rosemary, chives, oregano, etc.
  • salt and pepper to taste

Instructions
 

  • Add all ingredients to a bowl or plastic bag and toss to coat.
  • Serve immediately or store in the fridge until ready to serve.

Notes

Because lemon juice can actually cook shrimp, it's best to eat this within 2 days. The texture of the shrimp will begin to change the longer it is covered in the lemon juice.
