Ingredients
 

  • 7 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup VERY DRY shredded zucchini, see notes in recipe post.
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup bacon, cooked and chopped
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 325 degrees F.
  • In a large mixing bowl, whisk the eggs and cottage cheese until well combines
  • Fold in the zucchini, bacon, cheese, salt and pepper.
  • Spoon the mixture into a silicone muffin pan, filling each well just 3/4 full.
  • Pour about an inch of water into a 9x13-inch baking dish to create a water bath. Place the muffin pan inside this water bath.
  • Cook for 25-30 minutes for a mini muffin pan or 20-24 minutes for a standard muffin size.
