In a small bowl combine the oil, minced garlic, rosemary, salt and pepper. Stir well and set aside to allow the flavors to meld.
Peel (if desired) and cut the potatoes into wedges between ½ inch and ¾ inch thick.
Toss the wedges in the oil and spices, making sure they are well covered.
Place wedges in a single layer on a lightly sprayed baking sheet.
Bake 15 minutes, turn, then bake for 10 more minutes or until the wedges are crispy on the outside and tender on the inside.
Remember: the cooking time will vary based on how you sliced your potato wedges.
Air Fryer Instructions
Follow the assembly directions above. Once the wedges have been coated in the oil preheat the air fryer for 3 minutes to 375 degrees F. Place the wedges in a single layer for 10 minutes, flip and cook an additional 2-4 minutes until they have reached your desired tenderness.
For Best Air Fryer Results: you may want to try in batches, the key to be sure they wedges don't touch to get the crispiest texture.
