- Preheat oven to 350 degrees F and lightly spray or grease a deep pie dish or a cast iron skillet. 
- Carefully press the crust into the pan and up along the edges, then prebake for 10-12 minutes. 
- While the crust is baking, beat the eggs and ricotta together and set aside. 
- When the crust is finished, pull it out of the oven and increase the heat to 375 degrees F. 
- Sprinkle the bacon, spinach leaves, jalapeños, and gouda over the pie crust, then add salt and pepper to taste. 
- Pour the egg and ricotta mixture over the toppings. 
- Bake for 20-25 minutes until set in the center.
