The development of this copycat recipe was actually a little self-serving. This is one of our personal favorite restaurant recipes. This Alice Springs Chicken is a surprisingly easy, tasty recipe that is even low carb! This recipe creates an amazing flavor combo by using honey mustard and steak marinade.

One of this recipe’s best attributes is the ability to work well with so many side dishes. It works so well that it can be really challenging to decide what to prepare for your side dishes. I’m speaking from experience! Gouda Twice Baked Potatoes and Keto Cheddar Garlic Biscuits are my favorite side dishes for this recipe. Smothered Chicken Ingredients

These are all the ingredients you will need to make Alice Springs Chicken. Scroll to the recipe card at the bottom of the page to see the exact amounts for each ingredient.

  • Chicken Breast: this recipe calls for 3 large chicken breast, you will then cut the chicken as if you are butterflying but cut the chicken all the way through to create 6 thinner chicken breasts.
  • Honey mustard: Personal preference (I used G. Hughes Sugar Free to keep dish low carb)
  • Steak Marinade: Any variety (I used Allegro)
  • Butter: I used salted butter in this recipe.
  • Mushrooms: white, button or baby bella mushrooms will work in this recipe.
  • Paprika: adds a hint of sweet, smokey flavor to the recipe.
  • Garlic powder: helps provide a hint of garlic to the dish.
  • Thick-cut bacon: or some additional flavor we love Kroger’s Pepper Bacon
  • Colby jack cheese: you can use another variety of cheese in a pinch.
  • Green onions: optional, but I think this adds great complimentary flavors to this recipe.

How to Make Alice Springs Chicken

In addition to the ingredients listed above you will need a grill, or grill pan, a skillet and a baking dish. To make this delicious chicken recipe follow the step-by-step guide below.

Prep and Marinate the Chicken

Prepare the chicken cut as if you are butterflying, but cut all the way through to create two thinner chicken breasts. This will give you six pieces of chicken. Then add the chicken to a plastic bag or marinade pan. Whisk the honey mustard and steak marinade together, pour over the chicken, and marinate in the fridge for at least one hour, or up to 24 hours.

Grill the Chicken

Heat a grill or grill pan to medium heat, approximately 400 degrees F. Spray the grill with cooking oil and carefully add the marinated chicken to the grill. Cook the chicken 3-4 minutes on each side, an important thing to note is that you are not going to cook the chicken all the way through, it will finish cooking in the oven, this step is to get a nice sear on the outside. When the chicken has great color on both sides remove it from the grill and add the chicken to a baking dish.

Sauté the Mushrooms

Heat a large skillet over medium heat. Add 1 tablespoon of butter and allow it to melt completely, add the sliced mushrooms, occasionally stirring until tender, this takes about 8 minutes. The mushrooms will reduce in size and turn a golden brown color when they are ready. Once the mushrooms are cooked set them aside.

Add Sauce, Bacon, Mushrooms and Cheese

Preheat the oven to 375 degrees F while you assemble the chicken. To make the sauce, stir together the honey mustard, paprika and garlic powder. Spread the sauce over each piece of chicken. Next, add the sautéed mushrooms, crispy bacon and shredded cheese. Cover the dish with foil so it does not dry out as it cooks. Bake the chicken covered for 20 minutes.

Store any leftovers in an airtight container in the fridge up to 3 days. To reheat you can use the oven, microwave or air fryer:

  • Oven: Preheat the oven to 325 degrees. Place the leftovers in an oven-safe dish covered with foil. Warm for 15 minutes, then remove the foil and warm for another 5 minutes.
  • Microwave: place the leftovers on a plate and warm in 30 second increments until heated through.
  • Air Fryer: place the chicken in a lined air fryer and heat at 350 degrees for 4 minutes or until warmed through.

  • 4 slices thick-cut bacon, cooked and chopped
  • 1 cup Colby jack cheese, shredded
  • 1/4 cup green onions, optional

Instructions
 

To Marinate the Chicken

  • To assemble the chicken place the grilled chicken in a baking dish.
  • Stir together the honey mustard sauce, paprika, and garlic powder. Spread the sauce over each piece of chicken.
  • Top the chicken with the sautéed mushrooms, crispy bacon, and shredded cheese.
  • Cover the dish with foil and bake the chicken for 20 minutes.
  • Remove the chicken from the oven and check the thickest part to make sure it registers 165 degrees F.
