Everyone loves a simple, refreshing treat in the summer, and these Strawberry Popsicles always deliver! This 10-minute prep will lead to smiles all around without a ton of the calories and additives in storebought desserts. Swirls of sweet fruit puree and creamy pudding make this dessert beautiful, flavorful, and so easy to customize… Just think about all the flavor combinations you can try! You only need 4 ingredients and a freezer for this easy summer dessert.
Ingredients

- Strawberries or Strawberry Puree – Feel free to swap this out for blueberries, blackberries, raspberries, cherries, peaches, mango, etc. Any fruit will work.
- Granulated Sugar – You can use granular alternative sweeteners like monk fruit, Swerve, coconut sugar, etc. if you like. You may want to adjust the amount of sweetener based on how sweet or tart your fruit tastes.
- Instant Vanilla Pudding Mix – Use sugar-free if you prefer! Experimenting with chocolate, pistachio, cheesecake, or banana cream flavors could lead to some delicious results!
- Whole Milk – The higher the fat content, the creamier the texture. You could use a lower-fat milk since you eat them frozen, but the texture isn’t as nice and flavor isn’t as rich.
How to make Strawberry Popsicles
This gorgeous dessert is so simple to make! Here is a step-by-step guide so you can make this summer treat perfectly.
Make the two separate flavors


In one bowl, mix together your instant pudding mix and whole milk. Whisk it together until the mix is dissolved, then allow it to sit about 5 minutes to begin to set. In a blender cup, add your strawberries or strawberry puree and your sugar. Blend until combined and smooth.
Layer in a popsicle mold


To layer your two ingredients, you can choose to spoon these or pipe them into the molds with a plastic bag. I chose to pipe the thick pudding and spoon the thinner puree. This worked well to make a nice swirly look. Add about 1-2 tablespoons of pudding to each popsicle mold, then about 1 tablespoon of the strawberry mixture. Repeat again with the pudding, then puree, then finally top it off with one last layer of the pudding.
Freeze popsicles


Once all molds are filled, tap them several times on the counter (carefully but firmly) to remove air bubbles. Insert popsicle sticks into the center of each and freeze for 6 hours or more (until frozen solid). When ready to serve, run the mold under warm water for a few seconds to easily pull them out.
What to serve with strawberry popsicles
This is the perfect dessert to serve after a classic cookout with BBQ pulled pork, grilled portobello mushrooms, or a grilled Chicken Caesar Salad! Wash it down with White Sangria or Coconut Mojitos.

Storage
These are best enjoyed within 3-6 months when stored in an airtight container. They will “last” longer, but the taste and texture quality may deteriorate.

Ingredients
- ½ cup pureed strawberries, about 10-12 strawberries
- 1 tbsp granulated sugar
- 3.4 oz instant vanilla pudding mix
- 2 cups whole milk
Equipment
- 1 popsicle mold 6-count
Instructions
- Puree the strawberries until completely smooth, then stir in the granulated sugar. Set aside.
- Whisk together the pudding mix and whole milk until dissolved and combined. Allow to sit about 5 minutes.
- Add about 1-2 tbsp pudding to each popsicle mold, then 1 tbsp pureed strawberries. Repeat these layers once more, then top the popsicle molds with the remaining pudding (3 layers of pudding, 2 layers of strawberry). Tap the molds on a flat surface to remove air bubbles after they’re completely filled.
- Insert popsicle sticks in the center of each popsicle mold, and freeze for at least 6 hours or until solid.
- To remove the popsicles from the molds, run them under warm water for a few seconds, then pull them out. Store in an airtight container in the freezer.
Notes
- You can spoon the pudding into the popsicle molds or pipe it in using a ziplock bag.
Either one works great! - You can also substitute in cheesecake pudding instead of vanilla, or even chocolate!
- Other berries will work, like blueberries or raspberries!
- These keep well in the freezer in an airtight container.
