Chocolate Granola Bar
We adore peanut butter in this house. Actually adore maybe an understatement, more like obsessed. Yes, we are obsessed with peanut butter. Don’t believe me? I’ve got Peanut Butter Fudge, Peanut Butter Cheesecake Bars, Chocolate Peanut Butter Balls, Peanut Butter Cup Pie…the list goes on and on. And what goes better with peanut butter than chocolate? Nothing, that’s what.
These homemade granola bars are grain free, gluten free and very easy to customize based on your preferences. The base of this granola bar is made from nuts and fruits so they are nutritious and a great grab and go snack!
Ingredients in Peanut Butter Granola Bar
As always, here is a quick overview of the ingredients used in our Chocolate Granola Bars. For the complete recipe, just scroll to the bottom of the page.
- Dry ingredients: honey roasted mix nuts, unsweetened coconut flakes, dried banana chips
- Wet ingredients: creamy peanut butter, honey, coconut oil and chocolate chips.
In addition to these ingredients you will need a food processor, parchment paper and an 8×8 pan.
How do you make Gluten Free Granola Bars?
- Combine the dry ingredients in the food processor and pulse until the fruit and nuts resemble course breadcrumbs.
- Add the wet ingredients and pulse a few more times until incorporated (see image below)
- Fold in the chocolate chips and press the bars into a lined 8×8 pan. Chill at least 30 minutes until firm.
How do I store these granola bars?
You must keep these bars chilled. The binder in this granola bar is peanut butter and coconut oil, if left out they will melt.
Are these Chocolate Granola bars good for meal prep?
Absolutely! This is the perfect breakfast meal prep recipe. Simply prepare ahead of time, store in either a glass or plastic container (or a plastic bag) in the fridge, and grab and go in the mornings! It doesn’t get much simpler!
Tips for the best Peanut Butter Granola Bars
- If peanut butter isn’t your favorite nut butter, use another! Almond, cashew, or sunflower butter would all work fine here.
- Use a different type of chocolate chip! If you wanted, you can use white chocolate chips, peanut butter chocolate chips, butterscotch chocolate chips or dark chocolate chips. If you wanted to cut down on the carbs, you can always use Sugar Free Chocolate Chips
- If you don’t prefer honey, you can use another type of sweetener like molasses or maple syrup

Ingredients
- 2 cups honey roasted mixed nuts
- 1 cup dried banana chips
- 1/2 cup unsweetened coconut flakes
- 2 tablespoons coconut oil melted
- 1/2 cup creamy peanut butter
- 2 tablespoons honey
- 1/2 cup chocolate chips (optional)
Instructions
- Combine the dry ingredients in the food processor and pulse until the fruit and nuts resemble course breadcrumbs.
- Add the wet ingredients and pulse a few more times until incorporated (see image in post)
- Fold in the chocolate chips and press the bars into a lined 8x8 pan.
- Chill at least 30 minutes until firm.
These bars must be stored in the fridge.
Notes
Do not use a larger pan, such as a 9x9, the bars will be too thin.

Peanut butter and chocolate are the best combination ever! We too eat a lot of peanut butter. I kid you not, my son has had a peanut butter sandwich for his school lunch everyday since he started school. He is 16. That’s a lot of peanut butter sandwiches!

Oh that is too funny! My coworkers grew up in Columbia and apparently peanut butter is not common there like it is here. They can’t stand the taste or smell, I just totally do not get it! I can’t imagine life without peanut butter! 🙂
