Ingredients
 

  • 2 medium sweet potatoes, cut into wedges
  • 3 tablespoons olive oil
  • 3 cloves garlic, finely minced
  • 1 ½ teaspoons dried rosemary
  • teaspoon pepper
  • teaspoon salt

Instructions
 

  • Preheat oven to 400ºF.
  • In a small bowl combine the oil, minced garlic, rosemary, salt and pepper. Stir well and set aside to allow the flavors to meld.
  • Peel (if desired) and cut the potatoes into wedges between ½ inch and ¾ inch thick.
  • Toss the wedges in the oil and spices, making sure they are well covered.
  • Place wedges in a single layer on a lightly sprayed baking sheet.
  • Bake 15 minutes, turn, then bake for 10 more minutes or until the wedges are crispy on the outside and tender on the inside.

Air Fryer Instructions

  • Store in an airtight container in the fridge up to 4 days.
  • Freezing is not recommended

    • Air fryer 375 degrees F for 3-4 minutes.
    • Oven 400 degrees F for 6-7 minutes.
