These Crispy Garlic Roasted Sweet Potatoes make for a simple, savory side dish you will love!
I never realized what a creative person I am until I finished college.
For a time our best friend, who is a guy, lived with us and once during a conversation he refereed me to me as really creative. I remember thinking how odd that was. Me? Creative?
I guess I had this notion of what a creative person is. I grew up with a girl who is now covered in tattoos, dyes her hair wild colors and is always doing very artsy things. That was my idea of a creative person. Someone who could see life “outside the box” someone full of color and imagination. I was just not that person. I am plain, conservative even, definitely not a creative soul. Though a big part of me has always admired her free spirit.
When I finished college the first thing I did was start our little house renovation. I decided to repaint walls, rip carpets out, tile the back splash, paint the cabinets, and install new light fixtures. While I was deep in the throws of remodeling, the term, creative, still never crossed my mind.
Then Maebells was born. A little place here on the internet that is all mine. Filled with things I dreamed up, created, photographed, then wrote about. Even then I wouldn’t have labeled myself a creative person.
I have grown to believe that creativity is transformative. It may come in the form of a painting, writing, a remodel, or a perfectly prepared dish. Creativity is in the eye of the beholder.
I was thinking about this when I made these Crispy Garlic Roasted Sweet Potatoes. Sweet potatoes are so often paired with a combination of cinnamon, brown sugar and butter I wanted to do something different. I really love the combination of sweet and savory so instead I opted for garlicky sweet potatoes that were roasted to perfection! I love them on their own but they were fantastic with a little bit of shredded Parmesan and chopped green onions.
I think the thing that makes these crispy little potatoes so great is the expectant flavor combo. The crunchy potatoes with a hit of sweetness, paired with pungent garlic and green onions but a dash of Parmesan to mellow it all out. It makes for a wonderfully different side dish! Pretty creative, if you ask me!

- 2 large sweet potatoes, peeled and sliced fairly thin
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/8 teaspoon salt
- 1/8 teaspoon oregano
- Preheat oven to 400
- Spray a large cookie sheet (you might need two) with cooking spray.
- Toss sliced sweet potatoes with oil and seasonings.
- Lay potatoes in a single layer on baking sheet.
- Bake 10 minutes, turn bake 5-10 more minutes until crisp.
- Watch carefully so they do not get too brown.
- Top with Parmesan and green onions if desired
Cooking Tips: Your cooking time will depend greatly on how thinly you slice your potatoes, the thinner they are the faster they cook. Take a look at the preparation photos to see how I sliced mine.
Also, you can reduce the amount of garlic powder to 1/2 teaspoon if you are weary of garlic. They will still be great! Happy cooking!
