This Denver Omelette Breakfast Burrito is a delicious twist on a classic! Scrambled eggs are combined with sharp cheddar cheese, your favorite ham, fresh bell peppers and onions and all wrapped in a tortilla! This keto meal is quick, easy and perfect for meal prep.

You can prepare your Denver Omelette Burritos on a Sunday and enjoy all week long! Just wrap them up and grab and go in the morning- it doesn’t get any easier!

What is a Denver Omelette?

A Denver Omelette is also commonly referred to as a Western Omelette. A traditional Denver Omelette is made with eggs, cheese, bell peppers, ham and onions. But instead of being wrapped in a tortilla like we have done with our Denver Omelette Breakfast Burritos, the eggs are not scrambled and are instead mixed in with the other ingredients and all cooked together until the omelette can be folded over.

How to freeze Breakfast Burritos

To freeze these Denver Omelettes, allow to cool completely and wrap in plastic wrap, then cover in a layer of aluminum foil. Place in a freezer bag and store in the freezer for up to 3 months.

Are these burritos good for keto meal prep?

This is a fantastic meal prep recipe! Simply prepare ahead of time and wrap individually in aluminum foil. These burritos will stay fresh for up to 5 days. Store in a container with an airtight lid or a plastic bag. To reheat, you can warm in the microwave (with the foil removed) in 30 second increments until warm. You can also warm in a skillet, or in the Air Fryer!

How many carbs are in this recipe?

I made this recipe with a low carb tortilla and the net carb count was 6.8. If you are using a regular tortilla (or these yummy Zucchini Tortillas!) then the carb count will change.

  • 1 tortilla, regular, low carb or gluten free
  • 2 eggs, scrambled
  • 1/4 cup chopped ham
  • 1/4 cup shredded cheddar
  • 1 tablespoon chopped bell peppers
  • 1 tablespoon chopped onion
  • A pat of butter or spray of oil for skillet

  • Preheat a skillet to medium heat, then add enough butter (or add a spritz of oil) to cover the skillet.
  • Place the tortilla in the skillet, then top it with the remaining ingredients, adding salt and pepper to taste.
  • Cook the open tortilla 3-4 minutes. When it has started to brown pull the tortilla out of the skillet and wrap burrito style.
