  • Chicken Breasts and Andouille Sausage – There’s a great balance of lean protein and fatty flavor with this combination, and the andouille sausage adds a great spice to the soup. You can use other chicken cuts and a different sausage if you prefer, though.
  • Olive Oil, Cajun Seasoning, and Hot Sauce – You could swap the olive oil for your preferred cooking oil. The hot sauce does add a touch of heat, but you can add more or less depending on your spice preference.
  • Chicken Broth and Fire Roasted Tomatoes – The better quality broth/stock you use, the better quality soup you’ll get! If you only have regular canned tomatoes, that will work fine in place of the fire roasted version.

How to Make Andouille Sausage Soup

This simple soup just requires a large pot or Dutch oven with a lid. Here are step-by-step photos so you can make it just right every time!

  1. Sauté veggies. Warm your pot over medium heat, then add in olive oil. Sauté your onion, celery, bell pepper, and carrots for 3-4 minutes or until tender. Add in garlic and continue sauteing for another minute or until nice and fragrant. Transfer veggies to a plate or bowl and set aside for now.
  2. Brown the sausage. Place the sausage into the same pot you just used. Cook until browned, stirring occasionally so that each bite has nice color on it.
  3. Add all remaining ingredients and simmer. Return the veggies to the pot, then add in your chicken, seasoning, hot sauce, tomatoes, and chicken broth. Bring the mixture to a simmer and cover with a lid. Reduce heat to medium low and allow to cook for 30 minutes. Stir occasionally to prevent pieces from sticking to the bottom.

Storage and Reheating Instructions

This soup will keep well in the fridge for up to four days. Just make sure you allow it to cool completely before storing in an airtight container. It even freezes well! If you know you won’t finish it within 3-4 days, just pour the cooled soup into a freezer bag or freezer-safe container and freeze. To reheat, thaw overnight in the fridge and simmer over medium-low heat on the stove. Individual portions can be microwaved at 50% power, stirring between each 1-minute blast.

Do I have to use andouille sausage?

No, you can use nearly any meat you have on hand! Smoked sausage, chicken sausage, Italian sausage, or a meatless option like the Impossible brand would also work.

Is this recipe keto friendly?

This soup doesn’t have anything that would restrict it from being keto, but the use of tomatoes, carrots, and other veggies does bring the carb count to just under 12 net carbs per bowl. You might be able to work it into a keto diet, but I’d say this one is likely more “low carb” than “keto.”

Is this soup spicy?

This soup does have a touch of heat for very mild spice lovers. If you like spicy foods, though, you will want to increase the amount of hot sauce. As written, this is more of a family friendly dish with a light kick.

How can I make this even easier?

To skip the prep time, you could use frozen mirepoix to replace the celery, onions, and carrots and pre-chopped bell peppers from the store. If you are in a major hurry, you could skip the chicken breasts, simmer the soup 15-20 minutes, then add in shredded, pre-cooked chicken. The chicken obviously doesn’t soak up as much flavor this way, but it’s still tasty and makes a great dinner possible in a rush.

What if it’s too spicy for me?

If you’ve cooked a big pot of this soup only to decide it’s a little too hot for your liking, don’t worry! We can change that. The easiest way to mellow out a spicy soup is to stir in some cream cheese, heavy cream, and/or shredded cheese (cheddar would be great). Works with dairy-free commercial substitutes, too!

  • 1 pound chicken breasts
  • 1 13-ounce package andouille sausage
  • 1 1/2 tablespoons cajun seasoning
  • 2 teaspoons hot sauce
  • 1 14-ounce can fire roasted tomatoes
  • 32 ounces chicken broth

Instructions
 

  • Heat a large pot or Dutch oven over medium heat. Add olive oil and sauté garlic, onion, celery, bell pepper and carrots for 3-4 minutes, until tender. Remove the vegetables and set aside.
  • Add the sausage, stirring occasionally, and cook until browned. Return vegetables to the pot.
  • Add the chicken, Cajun seasoning, hot sauce, fire roasted tomatoes and chicken broth.
  • Bring to a simmer, cover, and reduce heat to medium low. Cook for 30 minutes, stirring occasionally.
  • Remove the chicken, shred and add back to the pot. Stir and serve.
