How to Grill Portobello Mushrooms
This easy appetizer or side dish is so easy! You will want a mixing bowl, a grill (gas grill, charcoal grill, doesn’t matter), and a grill pan or grate (scroll down for tips). Here’s a step-by-step guide:
Prep your ingredients

Start by combining the cream cheese, cheddar, crumbled bacon, and green onions in a small bowl, then set that aside for now. Next, wash your mushrooms and remove the stems. If you feel like mushrooms are a bit too bitter or you want a higher filling-to-mushroom ratio, use a small spoon (I prefer a metal 1/2 teaspoon) to remove the gills and hollow the mushrooms out a little bit more. Feel free to skip that step if you like.
Stuff and grill your mushrooms

Spoon your cream cheese mixture into the cleaned and hollowed mushrooms while the grill is preheating to medium high heat (about 375 degrees F). Place your stuffed mushrooms on a grill pan or grate, then transfer to the hot grill. Close and cook for 10 minutes, then check for doneness. Continue cooking in additional 2-minute increments until mushrooms are fork tender and cheese is melted.
What to serve with grilled portobello mushrooms
We’ve loved these with some marinated steak and grilled green beans for a super impressive meal on a hot day! They are also great with these Jalapeno Popper Burgers and some Strawberry Lemonade. Serve some alongside a Chicken Caesar Salad for a refreshing, balanced lunch or dinner!

Storage and Reheating
Allow leftovers to cool, then store them in an airtight container in the fridge up to 3 days. You can microwave these (45-second increments at 50% power), but they can get a little soggy. I prefer to air fry (375 degrees for 3-4 minutes) or bake (350 degrees F for 5-10 minutes) so the mushroom caps keep a nice texture.
Best Grill Pans for Vegetables
You can place the mushrooms directly on the grill grates, but for much easier prep and transport I highly recommend using a grill safe pan.
- You want to look for a pan that has holes in the bottom to provide the perfect texture. This also allows for even cooking, moisture to escape and the mushrooms to get a nice sear.
- A flexible pan like this is great, just be careful when moving it. Or a more sturdy pan with handles works too.
- If you have a smaller grill this is a great option, just remember you might have to cook in batches.

Stuffed Mushroom FAQ
Cooking times will vary based on the size of the mushrooms. For small mushrooms pictured here the mushrooms will be cooked through in 10-12 minutes. Just remember to check the mushrooms in 2 minute increments until they are fork tender and the cheese has melted.
Mushrooms are sensitive and absorbent, so you have to be careful cleaning them. You can briefly soak, then wipe dry (submerge in cold water, then gently rub to remove dirt before wiping each one dry with a paper towel) or wipe with a damp paper towel. Just remember to be gentle and limit exposure to water to under 5 minutes.
Yes to both! To bake in the oven, preheat to 350 degrees F and then cook for 18-20 minutes. If you want to air fry these, preheat your air fryer to 400 degrees F for 3 minutes, then reduce heat to 375 and cook for 6-8 minutes. You know they are finished when mushrooms are fork tender and cheese has melted.
