Taco Casserole is an instant family classic! This is the kind of recipe that everyone has their own spin on. Just gather all of your favorite taco fixings, put them in casserole form and top with cheese! This easy Keto Taco Skillet features taco meat, loads of vegetables, spices and cheese. 

The best part about this recipe is that it is made in one pan for easy clean up. If you have non keto eaters you can enjoy this over rice, with chips or in tortillas. For our low carb friends, this dish is excellent on its own, or with keto friendly rice and tortillas!

Ingredients for Keto Taco Casserole

As always, this is a quick overview of the ingredients needed for this recipe. For the complete recipe just keep scrolling. To make this low carb taco casserole you will need:

  • Ground Beef: You can also use ground turkey, chicken or pork if you prefer.
  • Taco Seasoning: store bought (check the carbs!) or homemade.
  • Zucchini: fresh zucchini cut into small pieces.
  • Onion: white, yellow or red onion will work in this recipe.
  • Bell Pepper: any color will do!
  • Canned Tomatoes: canned tomatoes with green chilies are best in this recipe. In the U.S. this is commonly referred to as Ro-Tel. However, you can use canned fire roasted tomatoes if you do not want to add any heat. 
  • Shredded Cheese: shredded cheddar, Colby-Jack or a Mexican blend are all great options. 

How do you make a Taco Skillet?

  • Heat a large, deep skillet over medium heat. Brown the meat and drain off any grease.
  • Add the chopped zucchini, onion, peppers, taco seasoning and undrained can of tomatoes to the skillet. Stir and incorporate everything well. Cook the mixture 7-8 minutes until the vegetables are tender and most of the liquid has evaporated. 
  • Sprinkle the cheese over the mixture and cover. Reduce the heat to low and cook 5-7 more minutes until the cheese has melted. 

What kind of taco seasoning do I use?

Store bought taco seasoning works great in this recipe. Just be sure to check the ingredients for hidden carbs if strict keto. Another option is this homemade version that uses basic pantry staples. 

Is this keto Taco Skillet good for meal prep?

This meal is fantastic for meal prep! Simply prepare as described above and store in your favorite meal prep containers. This meal will stay fresh for up to five days, so you are good to go for your work week!

Tips for the best Taco Casserole

  • Cut your vegetables into small enough pieces that you are able to get a taste of all the flavors in this yummy skillet with each bite!
  • If you wanted to make this meal vegetarian, simply omit the meat (or add your favorite meat replacement or tofu) and add 1/4 cup more of each vegetable!
  • Serve with Low Carb Tortillas, Zucchini Tortillas or Cauliflower Rice to make tacos! You can also throw your low carb tortillas into the Air Fryer and make homemade tortilla chips!

What should I serve with this low carb skillet?

How to Store and Reheat keto Taco Skillet

To store this keto meal, just place in a glass or plastic container with an airtight lid and put into the fridge. This low carb dinner will stay fresh for up to five days. To reheat in the microwave, just warm in 30 second increments on a microwave safe plate until the dish has reached your desired temperature. To reheat on the stove top, warm a skillet and add your leftovers. If desired, you can add a little chicken broth so you can be sure that your keto skillet doesn’t dry out. Heat until warm and enjoy!
