FOUR ingredient Roasted Salmon with Jalapeño Lime Butter! Healthy and delicious!
We are house hunting.
I grew up in the same house my entire life until I went to college. After I left my parent’s farm I lived in an apartment on campus, then the little starter home Mr. Maebell and I have shared for the last 6 years. So this whole moving thing is super stressing me out.
The last several weeks we have had the same routine, we rush home right after work and try to look at as many houses as possible before it gets dark. It has been exhausting and frustrating and has meant that I have had absolutely no time to cook dinner. The one good thing is I have had to get really creative to be able to make a healthy, filling meal from start to finish in under 30 minutes. That is exactly how this Roasted Salmon with Jalapeno Lime Butter came to be!
This Roasted Salmon is insanely easy the only ingredients are nice big salmon fillets, butter, jalapenos and a lime. This is the kind of dinner anyone can make!

- 2 medium size salmon fillets
- 4 tablespoons butter, softened
- 1 jalapeno, seeded and finely chopped
- 1 lime, zested
- salt and pepper to taste
- Preheat the oven to 400 degrees.
- Combine the butter, chopped jalapeño and lime zest. (Reserve the rest of the lime for squeezing over the finished fillets)
- Lightly spray a heavy baking dish (like a cast iron skillet) and place the fillets skin side down. Season well with salt and pepper. Place two small pats of the jalapeño lime butter on each fillet. Roast for 25-30 minutes until the salmon flakes easily.
