I come from a family full of teachers, and the build up for back to school is always a busy time in our family. There is all of the normal back to school shopping and prep work. But it is also a time where meals tend to change from that slow easy summer pace to the rapid fire quick breakfast and dinner options.

These ham and cheese keto egg muffins are perfect for busy mornings or an easy protein-packed lunch. The great part is that this is not only an easy recipe, but it is also extremely budget friendly.

This recipe consists of four real ingredients (the extras being salt, pepper and baking powder). This is the kind of meal you can double or triple and still not break the bank. 

These breakfast egg muffins are similar to a crustless quiche in many ways. They have a light, fluffy egg batter but they are absolutely packed with ham and cheese to make them extra filling.

Ingredients in Keto Egg Muffins 

To make these low-carb egg bake muffins, you’ll need the following ingredients:

  • Eggs
  • Heavy cream
  • Salt and pepper
  • Baking powder
  • Ham
  • Shredded cheese of choice

How to Make Ham and Cheese Egg Bake Muffins  

These low-carb egg muffins couldn’t be easier to make! Here’s an overview of the steps: 

  1. Combine the eggs, cream, baking powder, salt and pepper. Beat until completely combined.
  2. Stir in the chopped ham and shredded cheese until evenly distributed.
  3. Using a 1/4 cup measuring cup or ice cream scoop, spoon the mixture into a greased muffin tin.
  4. Bake at 350F until the muffins have set and a toothpick comes out cleanly.

Can I Freeze Egg Muffins? 

Yes! These keto egg muffins freeze very well. Let them cool completely, then seal inside a freezer bag to up to 3 months. When ready to enjoy, reheat in the microwave at 15-second intervals.

How Many Carbs Are in These Keto Egg Muffins? 

There’s no crust and no flour in these healthy egg muffins so they are ultra low in carbs, which makes them a great keto breakfast option. The exact nutritional value that I calculated is less than 1 net carb per muffin so you can enjoy more than one!

Tips for Making Healthy Egg Muffins 

  • I highly recommend using a silicone muffin pan for this recipe, because it will prevent the mixture from sticking and the muffins will release very easily.
  • These ham and cheese egg muffins will last up to 5 days in the fridge, making them great for meal prepping! 
  • You’re welcome to swap out the ham for another protein of choice. Just make sure whatever protein you’re using is pre-cooked!

Ingredients
 

  • 6 eggs
  • 1/4 cup cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon baking powder
  • 1 cup chopped ham
  • 1 cup shredded cheese, cheddar, swiss, or pepper jack work well

Instructions
 

  • Preheat oven to 350 degrees
  • In a medium size mixing bowl combine the eggs, cream, baking powder, salt and pepper.
  • Beat the mixture until completely combined.
  • Stir in the chopped ham and shredded cheese until evenly distributed.
  • Spoon the mixture using a 1/4 cup measuring cup or ice cream scoop into a greased muffin tin. I highly recommend a silicone muffin pan because it will prevent the mixture from sticking and the muffins will release very easily.
  • Bake 18-20 minutes until the muffins have set and a toothpick comes out cleanly.
