This high protein egg bite recipe is a combination of two of our all-time favorites! It’s got all the flavor of these Denver Omelet Egg Muffins but the deliciously creamy texture of our cottage cheese egg bites recipe. I know there’s not a giant difference in these, but we’ve made them so many times, it seemed weird to not share them! I’ve tested these with and without a silicone pan, with and without the water bath, and with other mix-ins. - Protein: Eggs and Ham – I used large eggs and a package of pre-diced ham for an easy prep. This would be an amazing way to use up leftover holiday ham, too. Other cooked, diced meat could be used in its place for variety.
- Dairy: Cottage Cheese and Cheddar Cheese – The cottage cheese adds a big dose of protein while also giving a beautifully creamy texture. Cheddar cheese can be replaced with any other cheese that melts well.
- Vegetables: White Onion and Green Bell Pepper – We went for a “Denver omelet” style because these vitamin-packed veggies give so much flavor. Swap for another kind of onion or shallot if you like, and you could use other types of peppers.
- Seasoning: Salt and Pepper – Feel free to add different herbs and spices if you like, but this basic blend is our go-to.
How to Make Cottage Cheese Egg Bites



- While the oven is preheating, fill a 9×13-inch baking dish with about an inch of water. Set this aside for now, you’ll need it later.
- Grab a mixing bowl and whisk your eggs and cottage cheese until well combined.
- Gently fold in your diced ham, shredded cheese, and chopped onions and peppers. Give a sprinkle of salt and pepper to taste.
- Carefully spoon the egg mixture into your silicone muffin pan, filling each well 3/4-full. Place the filled muffin pan into the prepared baking dish with water from Step One.
- Transfer the dish to the oven, cooking the egg bites in the water bath for 25-30 minutes for a mini muffin size pan or 20-24 minutes for a standard size muffin pan.

- Use a silicone baking pan. Eggs stick to everything else, so the silicone baking pan really helps to get all-in-one-piece, perfect egg bites.
- Don’t skip the water bath. Technically, these will cook fine and taste delicious without a water bath. Where you will miss it is in the texture. It really helps them come out creamy, not rubbery.
- Don’t use “wet” mix-ins. This is a super versatile recipe, and you’ll notice a ton of variations recommended below. Whenever you’re switching out veggies, meats, and cheeses, you want to avoid using ingredients that add a lot of moisture. Avoid using tomatoes, meats in sauce (like BBQ shredded chicken), or fresh mozzarella because that extra liquid will make it more difficult to get the correct, set texture.


Cottage Cheese Egg Bites Variations
- Chicken Bacon Ranch – Replace the mix-ins with diced, cooked chicken and crumbled cooked bacon. Stir some ranch seasoning into the mixture instead of salt and pepper.
- Spicy Sausage – Replace ham with cooked, crumbled chorizo and cheddar with pepper jack. Add a dash of hot sauce or a sprinkle of cayenne if you like.
- Huevos Rancheros (not keto) – Replace ham with rinsed black beans, add diced jalapeno, and serve with salsa.

This all depends on the size of your muffin pan! If your pan makes standard-size muffins, bake egg bites for 20-24 minutes. For pans that make mini muffins, cook 25-30 minutes.
You don’t have to! I make a similar version of these egg bites without cottage cheese, and they still taste delicious. However, I can assure you, you do not taste the cottage cheese at all. You could even blend the cottage cheese if the little cheesy pockets bother you.
No, you do not have to use a water bath, but your egg bites will be less creamy, feel a little more dry, and may become more rubbery when reheating.
