This hummus veggie wrap is packed with grilled zucchini, kale, cheese and hummus! It is my version of Jason’s Deli Zucchini Grillini, and it is great and so simple! This easy recipe is perfect for a summer meal or quick lunch. The tangy red onion and juicy tomatoes add refreshing flavors that you’re going to love!

The tender, grilled zucchini helps to melt your favorite cheese while the crisp kale adds a crunchy texture and the cool hummus holds it all together. Easily change up the vegetables based on your personal preferences for a versatile, healthy meal you can make in about 15 minutes!

Ingredients

This simple vegetarian wrap has a handful of basic ingredients. This is the kind of meal that you can prepare in just a few minutes on a busy night or have for a quick lunch. Find exact measurements for this wrap in the printable recipe card at the bottom of the page.

  • Zucchini – Sliced length-wise into thin, flat strips. A mandoline slicer works great for this! If you don’t have zucchini, yellow summer squash grills well, too.
  • Tomatoes – Diced or thinly sliced. I used grape tomatoes, but you could use a roma, cherry, garden tomato, or your favorite variety.
  • Red onion – Sliced into smaller, thin strips for easy bites. Feel free to leave these out if you don’t like the tangy onion flavor.
  • Kale – If you find kale too tough, feel free to massage it for a few minutes with a little splash of oil or dressing. Swap for spinach if you prefer a milder, softer green.
  • Cheese – I like using slices of white cheddar or chipotle gouda cheese for extra flavor, but crumbled feta or shredded havarti would be delicious as well.
  • Tortillas – I used a gluten-free tortilla, but you can use your favorite kind. Low-carb options are suggested in the FAQ section below.
  • Hummus – You can use this homemade recipe or a store-bought version for convenience. Bolder flavors like red pepper or roasted garlic are great to make the wrap even more flavorful!

How to Make a Hummus Wrap 

This healthy tortilla wrap takes less than 15 minutes to prep. Here are the basic steps to making it: 

  1. Heat a skillet or grill to medium heat.
  2. Remove the ends from the zucchini and slice lengthwise into strips.
  3. Toss sliced zucchini in olive oil and sprinkle with salt and pepper.
  4. Place sliced zucchini directly on the grill and cook until tender.
  5. Place the tortillas on the grill until the grill marks are visible and the tortillas are pliable.
  6. Remove tortillas from the grill and assemble the wraps: 2 tablespoons of hummus, one slice of cheese, zucchini slices, 1/2 cup kale, onion, and tomato slices.
  7. Wrap tightly and enjoy immediately.

Tips

  • I used a grill pan to cook the zucchini, but you can sauté it in a skillet or pop it on a preheated grill if that’s better for you. 
  • I like to use a classic hummus, but you can make your own or use whatever flavor you like most. Red pepper hummus would add amazing flavor here.
  • Be sure to grill the tortillas before assembling the wraps, otherwise they might split. The heat from the grill makes the tortillas pliable!

You could use a Mission Carb Balance tortilla to reduce the net carb count in this healthy lunch! Or make these gluten-free + keto Zucchini Tortillas. Messier low-carb options: Feel free to leave out the cheese but replace the tortilla with a cheese wrap or skip the kale and use a lettuce wrap instead.

What are the best cheeses for a wrap?

We like a creamy-yet-bold option to complement the hummus, so we opt for a great sharp cheddar, chipotle gouda, or even a dill havarti! A tangy feta would also be a delicious option.

How do I stop my tortilla from breaking when I wrap them?

The key to keeping the tortillas intact is warming them first. Just place the tortilla on the grill for a couple minutes after you cook the zucchini–Once it’s warm and the grill marks are visible, the tortilla should be pliable enough to bend without breaking or tearing.

  • 1 tomato, sliced (or handful of cherry tomatoes)

  • 2 large tortillas, I use Mission gluten-free
  • 4 tablespoons hummus

Instructions
 

  • Heat a skillet or grill to medium heat.
  • Remove the ends from the zucchini and slice length wise into strips. Toss sliced zucchini in olive oil and sprinkle with salt and pepper.
  • Place sliced zucchini directly on grill and let cook for 3 minutes, turn and cook for 2 more minutes.
  • Set zucchini aside.
  • Place the tortillas on grill for approximately one minute, or just until grill marks are visible and tortillas are pliable.
  • Remove tortillas from grill and assemble wraps, 2 tablespoons of hummus, one slice of cheese, zucchini slices, 1/2 cup kale, onion and tomato slices.
  • Wrap tightly and enjoy immediately.
